Pink Protein Pancakes

Guys, remember Ashley, my cute, talented friend who may just love good food as much as I do?

Well, while munching our way through a few helpings of Chili's chips and salsa (yeah, it's a proven stress reliever, just in case you didn't know) I sort of convinced her to work up a handful of food posts for you, because I just knew you'd LOVE them! She's got some mad skills, and I swear that every dish I've ever tried that she makes, is a totally winner.

I love whipping up yummy and healthy recipes for my family and sharing them with my ! Even if I WAS a little under the influence of Shelley's persuasive ways and slightly drunk on too many helpings of chips and salsa... I promise, I'm beyond thrilled to be sharing with all of you a handful of delicious favorites of mine!

The recipe that I'm sharing today is one that we LOVE at our house. Protein Pancakes! Of course you can make them any color you want, but because Valentines Day is fast approaching, pink only seemed appropriate!

Pink Protein Pancakes
Ingredients:
1 cup oatmeal
1 cup plain greek yogurt
1 egg
1 ripe banana
1/2 tsp baking soda
1 tsp vanilla
3 drops red food coloring
1 Tbsp powdered sugar


Instructions:
Combine all ingredients in a blender
Scoop 1/3 cup of mix onto hot skillet
Flip cakes after 2-3 mintues
Dust with powdered sugar or top with any other favorites!
This recipe is quick, easy and my kiddos adore the flavor. Of course you can omit the red food coloring and have these healthy cakes any day of the week too!
